Campfire Chorizo Cheese Dip

If you're like us, a hearty cheese-dip never sounds bad. Here's a simple recipe for your next outing that's sure to become a campsite favorite:
1 package chorizo (buffalo is our favorite!)
1 tsp olive oil
1/2 large red onion, chopped (can sub for 1 tsp onion powder)
1 8oz package cream cheese
2 cups shredded cheddar cheese
1-2 poblano peppers chopped
Heat skillet over campfire, add oil + onion, sautéing for approximately 20 minutes or until translucent and soft. Add chorizo, breaking it up to a crumble, cook evenly until browned on all sides. In a large mixing bowl, add the chorizo, cream cheese, and half of the cheddar cheese. Stir chorizo cheese mixture until evenly mixed, and then transfer it back into the skillet. Sprinkle the remaining cheddar cheese on top. Place skillet on campfire, cover with lid and foil packed coals to evenly heat on top. Cook for about 20-30 minutes or until the top of the cheese begins to bubble and turn golden brown. Serve with your favorite tortilla chips!
